Coconut & Raspberry Chia Bowl

We are willing to bet that after you bought that bag of Chia seeds from us so enthusiastically that it might just be lurking at the back of your cupboard?! Wondering what to do with those fabulous and nutrient dense little things? Well look no further – this is a super delicious way to enjoy them as a breakfast of even just a snack. Kept refrigerated it will last all week and it even passes as a dessert being so yummy. The combo of raspberries and coconut is really special but you can add different flavours, toasted nuts and fruit to suit your tastes.

Serves 2

 What you need

  •  15g (1/4 cup) unsweetened shredded Natures Choice coconut
  • 40g (1/4 cup) Natures Choice Chia seeds
  • 180ml (3/4 cup) full-fat coconut milk
  • 120ml (1/2 cup) Natures Choice coconut water
  • 2 tablespoons of honey or agave – or sweetener of your choice to taste.
  • 1 teaspoon pure vanilla extract
  • 60g (1/2 cup) raspberries, crushed

What you do

In a small bowl or jar, combine all the ingredients except the raspberries and mix well. Spoon the raspberries on top, then cover and leave in the fridge overnight.
