Almond & Coconut Bread

Ingredients
 8 Medium Eggs
 ¾ cup Nature's Choice Coconut Oil, melted and cooled
 3 cups Nature's Choice Almond Flour
 ¼ cup Nature's Choice Coconut Flour
 1 tbsp Nature's Choice Baking Powder
 1 tbsp Nature's Choice Herbal Salt

Preheat oven to 180°C. Line a 23cm x 13cm loaf pan with parchment paper and grease. Silicone moulds work well.

Whisk eggs until light and fluffy, about 5 minutes. Meanwhile, sift together the Almond Flour, Coconut Flour, baking powder, and salt.

While the eggs are still whipping, slowly stream in the melted and cooled coconut oil. Fold in the dry ingredients and don’t over mix.

Spoon into the loaf pan.

Bake until a tester inserted in the centre comes out clean, about 35 to 40 minutes.

Let cool completely before removing from the baking pan.
